To dehydrate the olives, dry the previously pitted olives in a heated oven at 100ºC for approximately 1 hour. Cool down completely and grind in a food processor.
Wrap the beef in the dehydrated olives and place it in foil inside the freezer from one day to the next.
For the sauce, mix the capers, vinegar and the olive oil in a bowl. Mix well and set aside. Remove the beef from the freezer and thinly slice the meat laying it on a plate as shown. Add the sauce, salt flower, black pepper, rocket salad and cheese. Finalize with a thread of OliveEmotion olive oil.
