Boil the octopus and separate the boiling water. Separate the tentacles and roll 4 tentacles in adherent foil at a time. Kepp it in the freezer to cool down. Cut the octopus and display on a plate.
Slice the various vegetables and separate. For the sauce, mix the octopus water, balsamic vinegar, salt flower and the OliveEmotion olive oil in a bowl.
